Day 74 of 100 Day Raw Food Challenge: Cucumber Wraps

Today I go into the kitchen and demonstrate making delicious raw cucumber wraps! Oh yes, get ready for Cutting Board Cam!

1 Extra Long Seedless Cucumber
1/2 Red Pepper
1 Avocado
Mixed Baby Greens

Flavor how you like! I used 2 drops of sesame oil, a dash of garlic powder, and a dash of salt.

DELICIOUS, and a wonderful crunchy alternative to a sandwich for lunch.

Thanks for the wonderful, simple tip of making something yummy and different. This is an excellent idea for me who still hasn't gotten used to eating nori so this is a groovy alternative. And SMEAR that avocado on there! YUMMY!

Wow Bunny Beauty! What a good idea!! I've never used a cucumber to make a sandwich before (of course on them, yes but in lieu of bread, no)-- Which got me thinking that I had a recipe to share with you, if you'd like, it would be a great substitute/addition to your guacamole spread on your sandwich: I call it "My Friend Cashew"


1-2 cloves garlic
1/4 of medium Anaheim pepper

chop finely in Cuisinart or other food processor.

add 1/2 small red bell pepper
small handful of fresh mint
1 handful of fresh parsley

combine again.

remove paste and set aside

add 1 cup of RAW cashew pieces and process until “meaty”
add 1/2 avocado, and while blending,
add 1.5 T of Extra Virgin Olive Oil
2 T rice vinegar (or if you prefer your red wine vin.)
a good pinch of Celtic Sea salt.

Blend until it begins to look smooth like a chunky pesto.
Stop and add in herb mixture. Pulse to combine smoothly. May take 30-45 sec.

Great idea and thanks for the demo. Really helps visualize how simple, easy and quick a delicious lunch can be. Keep them coming! Also I am always looking for nut alternative meals. This looks light and filling without being heavy.

i agree.. i love when you make food demo videos.. keep them up please!! especially nice light recipes that dont call for tons of dehydrating and nuts!

I just made this with Zoe's cheese with spring onions from goneraw.com.

so delicious! and fun. I forgot about the whole seedless cucumber thing but I got enough from a regular cucumber to make it work.

I just have to say that I have ended up making this a lot. Never with seedless cucumbers (can't find them) though. But it is a great fun alternative to the usual.
