Avocado Stuffed with Pineapple Salsa Recipe

Scoop out meat of avocado halves. Fill with pineapple salsa. Sprinkle black sesame seeds on top.

Pineapple Salsa
1 1/2 beefsteak tomato
2 cups pineapple
Fresh Italian Parsley
Fresh Cilantro
Garlic Powder
Celtic Sea Salt

Chop all ingredients to make the salsa, and mix well. Season to your personal taste.

I just turned my last avocados into a great guacamole or I'd be all over this. I have a beautiful pineapple that I've been trying to use.

I stumbled across you while link-hopping around YouTube. I'm not doing the raw thing intentionally, but I'm a vegetarian who's toying with the potential need to go no-gluten, so more raw will make its way into my life, I think. Everything you do looks really great (rawsome? I like that!) and so appetizing and inviting. I've added your blog to my feed reader and I'll definitely be back!
